About Cafe Don Pablo
Cafe Don Pablo traces back to 1989, when founder Darron J. Burke moved to South Florida and, through his wife Eliana's family in Colombia, developed a deep interest in Latin American coffee. The couple spent years learning coffee growing and roasting firsthand and traveling across Latin America to build relationships with growers, eventually founding the brand under Burke Brands LLC with sourcing roots in Colombia and Honduras -- the name "Don Pablo" was Eliana's grandmother's nickname for Darron. Those grower relationships, now extended to Africa and Asia as well, are what let the company roast small-batch, specialty-grade coffee to order rather than sourcing anonymously off the commodity market.
The brand's Subtle Earth Organic line, grown at high altitude in Honduras's Marcala region, is USDA Certified Organic and Non-GMO, and the company holds AIB Food Safety certification alongside organic-production certification through CCOF -- third-party verification behind the low-acidity, clean-cup claims rather than just marketing copy. That combination of single-region sourcing and organic certification is exactly what stood out when we cupped the Subtle Earth Light Roast for our own coffee bean roundup: a genuinely gentle, low-acid cup that still delivers real caramel-and-chocolate sweetness instead of the thin, sour profile many low-acid light roasts fall into.

Why we recognized Cafe Don Pablo
The Brew Gazette Top Brand recognition isn't paid for and can't be applied for. We award it to the brands whose products consistently stand out in our hands-on category reviews. Cafe Don Pablo earned it on the strength of the products below, evaluated the same way every product on this site is: bought, brewed with daily, and judged on what lands in the cup.

Subtle Earth Organic Light Roast Whole Bean Coffee
Grown at high altitude in Honduras's Marcala region and roasted light, this is a naturally gentle, low-acid bean -- the slow, high-elevation growth and careful roast reduce the chlorogenic acids that upset sensitive stomachs, so it's a genuinely smooth cup for reflux-prone drinkers. It defies the light-roast stereotype, cupping as caramel, honey, and milk chocolate with a soft, sweet body rather than thin and sour. Certified organic and non-GMO in a generous two-pound bag, it earns our low-acid pick for drinkers who want a light roast without the bright, tea-like sourness some light roasts carry.

- A top pick in Brew Gazette's coffee bean testing: the Subtle Earth Organic Light Roast is our low-acid recommendation, cupping with real caramel and milk-chocolate sweetness instead of the thin, sour profile common to low-acid light roasts.
- Single-region sourcing from Honduras's high-altitude Marcala growing region, a specific origin claim backed by USDA Organic and Non-GMO certification rather than a generic "organic" label.
- Third-party verified production standards: AIB Food Safety certified and organic-production certified through CCOF, giving the low-acidity and clean-cup claims real backing.
- Nearly four decades of direct grower relationships in Latin America built by founders Darron and Eliana Burke since 1989, the foundation the brand's small-batch, roasted-to-order sourcing model still runs on today.
- A genuinely broad specialty catalog beyond the featured bag -- Colombian Supremo, a Swiss Water decaf, and dedicated drip and pour-over grinds -- built around the same organic, low-acid sourcing philosophy.
